I just wanted to say YYYYUUUUMMMMMM. I made a batch and I had it today for breakfast after my workout and sprinkled some flaxseed on it. Thank you for sharing if you or anyone else has something else like it please post it I can use it the whole week just rotating a meal and then I don't have to figure out each meal what I will make is their a site I can get receipes from.

Happy mom of 3 - here is my original recipe that I have and use ALL THE TIME!

Salsa Chicken
4-6 chicken breasts
1 can or jar of salsa of choice

· Place the chicken breast in the bottom of a crock pot, and cover with the jar of salsa. Cook on low heat for about 6 hours.
· Remove chicken from pot and use 2 forks to shred the chicken. Put back in the crock pot and mix with the liquids.

Notes:
· I use TamXico low carb whole wheat wraps (found in the Mexican section of the grocery store). I put a heap/scoop of chicken in the middle and wrap up. Wrapped in the fridge, these stay good for a whole week. To reheat, I just unwrap, put on a plate, and zap in the microwave on high for 30 seconds. These are also good cold for on-the-go car trips.

I make this quite often also. Very good!

I saw this recipe in Muscle & Fitness & instead of doing it like single serving I did this:

1 lb. boneless/skinless chicken breast (cooked & cubed)
1 bag green beans (cooked)
1 1/2 small cans Healthy Request Cream of Chicken soup

Combine all & warm in pan. VERY GOOD!!! I usually throw some diced onions in it also. Thinking about trying some roasted red peppers next time I make it.

I also boil the chicken the night before I am going to make this, easy way to cook it then next night all I have to do is cut it up while cooking green beans. Easy & so good. The guy I'm dating loves this too, actually requested it the other night. :9

Also the recipe called for cream of mush soup, which I tried the first time but IMO I think the cream of chicken is much better.

Quick question about your salsa chicken; what size jar of salsa do you use. I have a 24 one and I wonder if that's too much. TIA!

Jonahnah-I just checked my salsa jar in the fridge! LOL It's 16 oz. And sometimes I don't even use the whole jar. The last time I made 5 breasts, I used about 3/4 of the jar simply because I didn't want it as juicy. But usually I use the whole 16 oz!

Try adding a can of corn and a can of black beans (rinsed). Sometimes I add one envelop of taco seasoning also. Yummy!!

Carmen-those are good variations. I keep corn and beans out of it, just to keep my carbs in proportion to the protein, but you're right! Add those and it makes a new dish!

My older DS likes it when I use chicken breast with a cup of water and a packet of dry taco seasoning! YUM!

I use Gayle's recipe but I add a packet of taco seasoning to it. I swear I can eat this stuff all week and not get sick of it.

Another thing I like to make is the same amount of chicken breast, a can of diet coke, and a cup of ketchup. This makes an unbelievable bbq chicken in the crock pot.

Great recipe! One thing I did find out though is if you add the taco seasoning packet that it becomes VERY salty. I added Pace salsa and the taco seasoning, and it was just way too much. Now I add a tiny bit (prob. a tablespoon)of the seasoning and the salsa as normal. Turns out just to my liking.

This recipe is also very good. It's from about.com recipes.


Crockpot Creamy Chicken and Veggies Recipe

Prep Time: 15 minutes
Cook Time: 10 hours

Ingredients:
4 lb. chicken, cut into serving pieces
2 lbs. small red potatoes, cut in half
16 oz. pkg. baby carrots
1 onion, chopped
2 cloves garlic, minced
14 oz. can low sodium chicken broth
1 cup light sour cream
3 Tbsp. flour
1/8 tsp. white pepper
1/2 tsp. dried thyme leaves

Preparation:
In 3-4 quart slow cooker, place potatoes, carrots and onion. Top with chicken. Pour chicken broth over all. Cover crockpot and cook on low for 8-9 hours until chicken is thoroughly cooked and vegetables are tender.
In small bowl, stir together light sour cream, flour, pepper, and thyme until well blended. Stir into mixture in crockpot and turn heat to high. Cook for 15-20 minutes, stirring occasionally, until thickened. 6 servings

NOTE: This recipe originally cooked for 10-12 hours on low. However, with the newer crockpots which cook hotter, you should start checking the chicken and vegetables for doneness at the 8 hour point.
 
LD-we use that recipe here on the days that my KIDS cook dinner. They measure out the salsa or ketchup (we've subbed salsa for the ketchup and it makes a chunkier bbq sauce), and make this BBQ chicken on the stove. So easy and THEY MADE DINNER!

Gayle, like you I like to try to keep the carb count down & calorie too. I have found using a corn & black bean salsa works really well. I have used Meijer organic brand & it is REALLY good. I also have a friend that sells Tastefully Simple so I've used their corn/black bean salsa too, which is good!

I am actually making this for dinner tonight. I used the corn/black bean salsa from Tastefully Simple then also added a little more onion, yellow & orange pepper, and some roasted red peppers. I used a small amount of the new Southwestern seasoning salt from Tastefully Simple... we'll see how it is! I used their regular seasoned salt before & it is wonderful on just about everything!
 
clothesminded-the recipe for the coke, ketchup and chicken I actually got for the first time when I joined Weight Watchers, and got it off their boards there. If you put it in the crockpot, you just put the chicken, 1 C ketchup and 1 can diet coke (I believe those are the ingredient measurements....I haven't checked my recipe box to be 100% sure). Then cook it on low all day. Or, like my kids do, we simmer it with the chicken in a pan for about 30-45 minutes. If you keep the lid off, it cooks down and gets pretty thick, or with the lid ON, it has more liquid. I haven't made it in a while, since I use the Salsa Chicken recipe like EVERy single WEEK! LOL
