chicken, broccoli, & sundried tomato pizza

I'm just full of recipes lately, but I know I always appreciate when you all share with me. This is a Rachael Ray specialty that I changed here & there for health/taste. I'm sure you can modify more if need be. It's awesome!!

1/2 - 1 lb. skinless, boneless chicken tenderloins
2 small bunches of broccoli
3 cloves garlic
10 or so sundried tomatoes
16 oz. reduced fat or fat free cottage cheese (regular uses ricotta - I use 2%)
reduced fat or FF shredded mozarella (1 pouch - I use reduced)
parmesean cheese (in the cannister)
refrigerated pizza dough (I use what's in the fridge aisle but you can do whatever here)

Roll out pizza dough and brush with a smidge of olive oil and sprinkle w/ paremsean cheese. Cut up chicken tenders into bite size pieces and sautee w/ the garlic cloves in a pan sprayed with cooking spray. While cooking chicken, cut up broccoli into small, thin, pieces and boil for 5 min & drain. When chicken/garlic & broccoli are done, spread evenly over crust. Dot spoonfuls of cottage cheese over chicken/broccoli and spread out over crust. Add sundried tomatoes and then sprinkle with the mozarella. Top w/ a few more sprinkles of parmesean cheese. Bake in a 450 degree oven for approx 10-12 minutes until crust is golden brown. The flavors are so yummy!

Ooo, Debbie! Thank you! This sounds good! I can't believe there's a 30 Minute Meal recipe that I don't remember seeing, though. LOL LOL

I love your modifications and I can't wait to try it. I get a great refrigerated whole wheat pizza dough at Trader Joe's I would try it with. YUM! Thanks for sharing!
 
That sounds really yummy, only I don't care much for sun dried tomatoes. I wonder if you could use Roma Tomatoes instead. Does anyone know if there is a refrigerated whole wheat pizza crust available anywhere?

I don't know Katie, but you can bet I'm gonna find out! This recipe sounds delicious! Especially cause the boys and DH just had regular pizza for dinner & I'm passing it up!!x( Kali
 
Hi Katie,

Boboli makes a whole wheat crust now. I was SO excited when I saw them, and even happier after I tried and really liked it. :) It can be hard to find- in the Memphis area, that is. It's with all the other Boboli stuff, usually kind of near the cheese in the grocery stores here. Good luck!
