About the gym....does anyone know if you can pay for individual classes as you go. I'm not close enough for a membership but I am close enough to take a class every now and then.

That's a good question...I don't know...Only knowing Cathe from video makes her a "star" of sorts (in my eyes anyway) but if I were to first come across her as an instructor in a gym I wouldn't think of her that way...not that my view of her ability would be any different...I would think of her more as a regular person who really knows her stuff when it comes to working out rather than a "famous person".
