Does anyone have a good recipe for orange fondant? I have been making chocolate orange creams and I can't seem to get the right formula for the taste of orange. I just used two tablespoons of fresh squeezed OJ and a tsp of orange oil, which is way more than they suggest and it still is not orange enough. Anyone ever made these?

I have made something similar and what I find helpful is orange extract (not sure if that is the same as the orange oil you use) and orange zest (fresh or dried).
 
I would purchase your extract at a place like Sur La Table or Williams Sonoma, any gourmet type shop instead of using the stuff from the regular grocers. I buy my vanilla extracts and vanilla paste from these stores and they lend a much richer flavor.:)

Using orange juice, fresh squeezed or not, will not add flavor, its too weak and will break down once its heated, you want a very concentrated form of the flavor. However, fresh OJ would be wonderful in things like buttercream frostings and stuff.:p
 
I get my flavored oils from a bakery shop along with all my other supplies. They insist that it is a much more intense flavor. Last time I used a 100% natural rasberry extract there was an after taste which I didn't like. I did use freshly squeezed lemon juice in some of the last batch and the taste was so refreshing and intense.
