broccoli florets.....

What does everybody do with them? I steam them, use them raw in salads, but what's another quick way to fix them? I like to buy them ready to use but even then I find myself throwing them out after I've let them sit in the fridge too long and not used them!!
I LOVE the way broccoli tastes at a chinese resteraunt and have tried stir frying them but something maybe I'm doing something wrong and it doesn't taste right.
Any ideas or suggestions?

I fry them in olive oil, garlic, salt and pepper. YUMMY! :9

I have also replaced the olive oil w/fat free butter spray...still very tastey! :9
 
I just started doing the same thing...except I call them sauteed or grilled (avoiding the FRIED!!)

I put a little olive oil or Pam in the pan and then add some minced garlic and the broccoli and let it pan fry until it gets some nice brown crusty edges. The caramelization really brings out a good flavor.

I didn't even like broccoli before and now I eat it several times a week! You can try this with other veggies too.

Also - you can roast vegetables for 10-20 minutes at 350 - 400 degrees. Just throw them on a cookie sheet with some pam and seasoning. I do this to broccoli, asparagus, zuccini, squash. Potatoes take a bit longer but they're great this way too.

Finally, for really crisp veggies you can blanch them by dropping them in boiling water for about 30 seconds.

Yeah, that's what I meant but the only word that was coming to mind at the time was FRIED! LOL I know it's an EVIL word around here! }( :p ;)
 
Just had this for dinner: Broccoli steamed toss with whole wheat pasta (2 oz dry per serving), 1 TBSp olive oil per serving, a little garlic, salt & pepper and 1 TBSP of the best quality parmesean cheeze you can find. If it appears too dry toss with a few TBSP chicken or vegetable broth. This is a lightened up version of 'aglio olio pasta with broccoli' add a big green salad with maybe some chickpeas in it and dinner is served.

Okay, not broccoli but cauliflower.
I steam and mash, and put in a small amount of brummel butter.
When I really have time, will do the same, but carmelize onions in some olive oil and mix in with the mashed cauliflower, omit the brummel butter.

I steam a whole lot of them at once, then toss them into pasta, rice dishes, salads, on pizza, into soups. You can put little broccoli bits just about anywhere. Except maybe on your cereal. x(

I have made this exact same recipe and I love it. It's a favorite at my house. Sometimes I up the protein by adding some Italian chicken sausage or canellini beans.

I blanch the broccoli first, then I use the same pot of water to boil my pasta. I scoop out the broccoli after about 2 or 3 minutes, let it drain, then put it in a skillet with evoo, garlic, crushed red pepper flakes, and Italian chicken sausage if I'm using it (I brown the sausage in the evoo along with the other items above). When the pasta is done, I drain it and dump it into the skillet with the other ingredients, then put a generous sprinkling of fresh grated parmesan cheese over the top and give it a good toss.

This recipe is so versatile--you can use endless varities of veggies and beans/meats/cheeses. Really fun to play around with.

I have a double stack steamer. I put them in there w/ other veggies and steam away. I also have what's called The Micro Chip. It is a little white slitted tray that you put in the microwave. I have NEVER seen broccoli come out so green before by just using the Micro Chip. It is awesome. I just sprinkle Mrs. Dash and some shredded cheese and add grilled/baked chicken. Now I'm getting hungry.....see what happens when we talk about food?LOL;)
 
Not sure if you'll think this sounds good, but I mix cottage cheese in with my steamed broccoli and add some pepper. It may sound weird, but oh it's so good. I also use frozen mixed vegetables from places like BJ's, Sam's or Costco and add those in as well. It's the perfect thing for me to eat while DS is eating his dinner since DH and I don't eat until 8pm. :)
 
Well, I wouldn't have thought of it, but I love cottage cheese and broccoli, so why not mix them together?
I'll give it a try!
