My DH really likes rice and fried eggs for breakfast. I have started making it with brown rice. I just can't think of a way to make it without the butter. Any ideas? I also wanted to know from a health stand point how this breakfast rates? Thanks

You've got carbs, fibre, protein and vitamins in there. So it passes as far as I am concerned.

I would fry the eggs in olive oil which is a healthy fat, and use olivio spread (olive oil based) for the rice.

I wold either have fruit on the side or a V8 juice to wash it down with. Then it becomes a bit more complete. I can't eat a meal with out some veggie or fruit.
