Breakfast idea

I was watching FoodNetwork a couple of weeks ago and saw Elle Krieger. She's a nutritionist that has a new show (fav channel!). She had an idea that really struck me....toast spread with avocado instead of butter or something else. I think that she layered smoked salmon slice on top too, but the avocado idea really got me to thinking about 'alternate' toast toppings.

Personally, I am a peanut butter-girl!!! Can't live without it!
 
That sounds delicious. I too am a peanut butter girl. Whole wheat toast, peanut butter and a banana. My favorite breakfast!
 
I'm a PB freak!!! I don't even need the toast...just give me a spoon and I'm a happy camper :7 .

I kind of do the avocado thing in the mornings, except I make homemade guacamole and fill a har-boiled egg white with it. I'd much rather have the yolk (which I do splurge on, sometimes) and I know that they have a lot of health benefits but I have to be very mindful of my cholesterol. My levels are fine (better than fine, actually) but EVERYONE on both sides of my family have high cholesterol and most are on medication for it. There have also been 3 fairly close relatives (grandparents and great-grandparents) that have died from heart attacks so it's something that I definitely have to watch.

Sorry about the novel...got off on a tangent. Anyway, I LOVE avocado in the mornings...YUM :9 .

I dig the toast (whole grain of course)... I dig the avocado but I don't dig the idea of the two together. I'll take bit of the fake butter on mine please...
 
One of my favorite sandwiches ia 1/2 avocado spread between two slices of hemp/sprouted grain bread. Nothing else needed!
 
I actually got this idea from Kathryn and added some dijon mustard and LOTS of baby spinach on toasted sprouted grain bread. I also add some nutritional yeast sprinkeld over mashed avocado. It is to die for!

My favorite is avocado on "toasted 12 grain hazelnut" bread It's even better with a little melted Gouda cheese.}(

If I can, I will always use avocado in place of mayonaise.


If you have a kneaders in your area, get that 12 grain Hazel nut bread! It's fantastic toasted. The hazel nut flavor really comes out.
 
Since my move out west, I also have become an avocado convert.....they are so much more available and nicely ripened than they were back east. I eat them all the time....in salads, in my sandwiches, in my scrambled eggs....YUMMY!
 
Since I finally unpacked the food processor I bought last year, I've been making up quick batches of guacamole (or adding more liquid to make salad dressing).

I just throw some onion and garlic in the maching and mince it, then add tomato and blend a bit, then add avocado, lemon juice and celtic sea salt and blend some more. I like it simple, but you can add cilantro or other herbs as well.
