I was flipping through one of my cooking magazines last night and ran across this easy French toast recipe. I just finished eating it and it was heaven!!
The actual recipe calls for
2 T cream cheese, softened
2 thick slices of cinnamon-raisin bread
2 T strawberry jam
1 egg
1 T butter
Spread cream cheese on one side of bread, jam on the other, put them together. Dip both sides of bread in beaten egg in a shallow bowl. Melt butter and cook on both sides. Serve with syrup.
Now..... I had to clean this up a bit, so I used...
2 T LF cream cheese
2 slices of my regular WW bread
2 T of my MIL's strawberry/fig preserved made with Splenda - just use SF strawberry jam preserves
1/4 cup Egg Beaters
cooking spray.
I used SF syrup
On fitday here's how it looks...

Right on target. So adding a high-protein, low-fat accompaniment to the french toast helps balance this out.
