Okay, I'm back. BFL UB done! Upped my weights a little on front raises and traditional curls using my platemates. YAY!
Here is the Applesauce Oatmeal Muffin recipe from Tosca Reno's Eat-Clean Diet Cookbook:
Ingredients:
1 cup dry old-fashioned oatmeal
1 cup unsweetened applesauce
1/2 cup skim milk, soy milk, rice or almond mild (I used 1%)
2 egg whites, beaten
2 T ground flaxseed
2 T + 1 t canola oil (I subbed more applesauce instead of the oil)
1 T baking powder
1/2 t baking soda
1 t cinnamon
1/2 t ground nutmeg
3/4 c whole-wheat flour
1/4 c dried cranberries
1/4 c dried cherries
1/4 c raisins (I made this on the fly and didn't have dried cranberries or cherries so I used 1/2 c raisins)
Preparation:
1 - Preheat over to 375 degrees F. Prepare muffin tin by lining with paper or silcon liners, or cooking spray.
2 - Combine oatmeal, applesauce, milk, eggs, flax and oil in medium bowl. In another medium bowl, combine dry ingredients including dried fruit. Make a well in the center of the dry ingredients and pour wet ingredients into it. Stir until all ingredients are just combined.
3 - Using a small ladle, full muffin cups 2/3 full. Bake 15 to 20 minutes. Cool on wire rack.
Next time I make these, I'm going to omit the nutmeg and add in some chopped walnuts. I may also add some other kind of spice to try and make them kind of gingerbread-ish tasting. I've just started experimenting with spices, so if anyone has any suggestions, I'd love to hear them!!
