Heidi, great workout planned for you today! Hopefully by this evening the September rotation will be posted! Yeah, the girl is sick alot and she takes care of her elderly parents so shes out alot with them too. It makes it hard on me because I have to pick up her slack with the patients, so it's really like I am getting a workout all day long! I must walk 3-5 miles during working hours, no lie! I need to get a pedometer to see. School starts tomorrow! I hope you can stay on track with your workouts. Will you have to re-arrange your workout schedule? Kathy, welcome back! I have been reading your blog...never have time to post though! Your workouts, as usual, are outstanding! I liked your "inspirational" quotes and sayings from a couple days ago. I agree that running is hard and you really have to push yourself but when you finish and meet your goals the high lasts all day.
Okay, as promised here are the recipes!
Whole Wheat Flax'n Apple Muffins
1/4 cup Hodgson brand (or similar) Milled Flax seed
3/4 cup WW flour
3/4 cup white flour (I used all WW flour)
1/2 cup sugar (I used brown sugar)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, beaten
1 1/2 cups finely chopped apples
3 tbsp vegetable oil
1/2 cup milk (I used soy milk)
1/2 cup chopped nuts
Blend dry ingredients together in bowl. In separate bowl, combine egg, oil and milk. Add dry ingredients to egg mixture and stir just until blended. Fold in apples and nuts. Batter will be thivk. Fill well-greased muffin cups 2/3 full. Bake at 400 for 18-20 minutes or until top springs back when touched.

[FONT="]1 lb frozen boneless skinless chicken breast (do not thaw)[/FONT]
[FONT="]2 15oz cans rinsed black beans[/FONT]
[FONT="]2 10oz cans drained diced tomatoes with green chilies[/FONT]
[FONT="]1 cup frozen corn[/FONT]
[FONT="]Cilantro[/FONT]
[FONT="]FF sour Cream[/FONT]
[FONT="]In 3qt or larger slow-cooker, combine chicken, beans, tomatoes and corn. Cover and cook on low for 6 hours. Garnish with cilantro and sour cream.[/FONT]
