I have a question, I'm not new to weight training but have always quite before seeing some results do to weight gain. I've heard that water fills the muscle and as a result the gain is there. My question is, is there a time frame when you don't see the gain. I am overweight and I know they say muscle burns fat. I love lifting, I just get discouraged with gaining. Should I just do cardio until I reach my goal and then lift?

Definately do not forgo weight training.

JUST DO IT!

It's just as important as the cardio aspect of your work outs.

For me, I gain more b/c when I lift heavier I'm hungrier and instead of reaching for low cal foods I grab too much junk!

To limit initial gains, and burn more fat, you might stick with circuit-type weight workouts (moving quickly from one exercise tothe next without much of a break in between, like Jari Love's workouts) or cardio/weight combo workouts for a while, until you dropsome of the fat you want to lose.
