Beets?

Beets = ick, yuck, bleck, phooey!!! They taste like dirt to me. Ugh!! DH and DS love them, so they are on the dinner list tonight. I normally just boil, slice, and butter, sometimes a bit of brown sugar as well. YUCK!!! That's how they like them. I swear the 2 of them could eat a whole garden full of them. I also tried them w/ a bit of OJ and brown sugar once and Harvard beets one time (the sweet/sour vinegar sauce) All absolutely horrid. I eat them to avoid fixing another veggie and to make a good example, but these have to be my least favorite veggie of all. Anyone know how to make these monstronsities taste good - or at least choke-downable?

Have you tried roasting them? They are excellent in a salad with baby greens, walnuts, chevre and a muscat orange champagne vinegar.Yummy.:D

This is how to roast beets is from cook's illustrated:

Roasted beets bleed very little when cut, so they can also be used in recipes. Just remember that the dish will take on a sweet and very distinct roasted flavor.
Ingredients
1 bunch beets , about 2 pounds, greens removed and reserved for another use, leaving a 1-inch beet top; beets washed thoroughly
1 tablespoon olive oil (if roasting without foil)
Instructions

1.Heat oven to 350 degrees. Wrap beets in foil or brush with olive oil and place in small roasting pan. Roast until beets can easily be pierced with thin knife or trussing needle, about 1 hour for small to medium beets. Cool slightly and remove skins; serve.
 
I have to agree about regular, natural, beets, cooked, whatever, BUT I absolutely LOVE pickled beets! My family lived on a farm when I was a kid and we had a HUGE garden and my mom canned everything! My gramma had a family recipe for pickled beets and that is the ONLY way I will eat beets ~ the more tangy the better! I honestly don't know what the canning/pickled process does to the nutritional value of beets, but with my nutritional background I consider it a win!
 
Never liked beets until I tried roasting just as the above recipe states except I sprinkled them with some sea salt. Sliced on a bed of greens with walnuts and goat's cheese--absolutely fabulous. Actually after they have cooled I just want to slice and eat them plain.
 
and add grilled asparagus, roasted red pepper, and ripe Bartlet pear to the salad.... and a couple turns of fresh ground black pepper. I might have to make this tonight - and my son's actually request this salad with their bday dinners!!!!
 
OMG, I love love love beets. Just boiled, skinned with some butter and salt & pepper.:p I just don't cook them that much as I hate taking the skin off of them. I have to wear rubber gloves just to handle them.

Now if you said brussels sprouts, I would have agreed with you. I refuse to cook them. YUCK

I hated those too - especially over cooked in a soup, blech! BUT, quarter them, braise/low moisture saute them with garlic, lots and lots of garlic, until their sides are brownish and they are fork tender, then squirt with lemon, add a sprinkle of sea salt, well YUM. (my kids love these too)

I'll make them tonight too. Hey thanks for helping me with my menu plan, we're also having grilled rib eye and home-made oven fries. (love that mandoline!)

- Another beet idea is to grate them for raw salads, grate carrot also, together you just might enjoy beets more.

MMMMM..... I love brussel sprouts. Unless they're cooked down to green mush. Steamed w/ S&P and a bit o'butter. Or lightly browned in a pan. Roasted w/ a bit of olive oil and S&P. YUM!! We're growing them in the garden this yeat.

My beets are in the oven now, we'll see how they come out roasted. That, some yukon gold taters and chicken breasts, and cheesy corn bread are for for dinner. I just couldn't resist the cheesy corn bread:eek:

Just take a raw beet, peel it, shred it with a grater, and add it to a salad. Turns it pink, but it's slightly sweet and tastes really yummy. I don't like cooked beets, but why cook them?
 
This thread has inspired me try roasting some in my solar oven. I bought some today and will cook them tomorrow. I've been looking for a way to include beets in my diet.
 
Raw in salads, roasted with olive oil and seasoning, boilled with salt and butter, or even straight out of the can and pickled; my family LOVES beets!!!! They aren't for everyone thougth :(

Um, they tasted like beets. Not as strong of a beet-y flavored as boiled, so wasn't too bad. They didn't have as much of that earthy/dirt flavor. They were much better than normal; I just think they aren't ever going to be a favorite of mine. I have some leftovers, so I may try them cold and diced up on a salad for dinner tonight. I have given them the ol' college try, though. Just not gonna be a fave. Oh well.
