Banana-Bran-Orange Muffins

Here's a recipe I tried today that I thought was really great and wanted to share it.

Banana Bran Orange Muffins

2 C whole wheat pastry flour
2 C unprocessed bran
1 t salt
1 T baking powder
½-1 t baking soda
2/3 C packed brown sugar

1 T cinnamon
2 t ground ginger
½ t allspice
2 T vanilla extract

2 C mashed ripe banana –mashed in food processor, so they are pretty liquidy
2 large eggs
1 C Tropicana Light OJ with Calcium
2 T vanilla extract

1. Mix bananas and eggs & vanilla in large mixing bowl. Add Bran and let soak for at least 30 minutes.
2. Mix together dry ingredients and spices in a separate bowl
3. Combine dry and wet ingredients
4. Scoop into muffin pans. About ¼ c batter per muffin. Makes 20 regular size muffins
5. Bake at 400 for about 20” until brown on top . Let cool in pan for 5 minutes or until they come out of pan easily. Then cool completely on rack.

Whoops -- I should say that the original recipe came from Mollie Katzen's Sunlight Cafe Cookbook and was for Pumpkin muffins, but I modified some ingredients because my goal today was to get rid of ripe bananas! If you didn't use eggs & used substitutes, it could be a vegan recipe.

The original recipe uses mashed pumpkin instead of bananas; milk instead of OJ and all-purpose flour for the total amounts of WW pastry flour and unprocessed bran; and an extra 4 T white sugar..
 
Glad the recipe sounds good to you all, too. I think you could experiment with the sugar, too, and decrease it to a half-cup or even less...

You could probably use milk or buttermilk instead of the oj and skip the orange flavor...and
Save yourself a trip to the store!
