....and I just ordered a new cookbook (like I don't have enough already!) by Anne Byrne, "Chocolate from the Cake Mix Doctor." Her last one "The Cake Mix Doctor" is one of my favorites. I'll let you know how I like it. I'm gettin' hungry just thinkin' about it!:9

Last year I did not do cookies; I only did your Pecan bars and the wonderful, perfect, superb coconut cake that was posted here--and my own dark fruitcake. (I can't remember, HB, if that coconut cake was yours.):-rollen
But, I, too, bake everyone else's recipes and love it.

I like sampling too much myself....that's why I've begun to do all my step tapes (except Circuit Max, my personal killer) on an 8" step! I have to work all those goodies off somehow! This week there was some left over cake from the church screamin' at me from the freezer on Tuesday! DOUBLE YIKES!!!! I have to stock up "legal" goodies for a mid-week slip-up.

What's your "legal" goodies? Yesterday, for my husband's birthday, I made a chocolate angel food cake...would that be legal? We usually save our treats for the weekend, so I'm even feeling a little guilty about this all-natural, fat-free, low calorie goodie!

The low in sugar part is the toughie. I HAVE done some baking with Sugar Twin that has turned out pretty good....you can also go have Sugar Twin and half real sugar. They also have some good fat substitutes that are fruit based for baking, such as Smuckers Baking Healthy. IF you inclined to do your own baking, that is. At least if you bake it you know what's in it for sure.

I like candy that is low fat like candy corn....stuff that you shouldn't pig out on anyway, but if you have to, this stuff is not as bad. Dr. Shapiro's book makes this point, too. Since it seems that I have needed a mid-week goodie, I'm going to make it a point to have some decent junk just for that purpose. This week I'm getting Healthy Choice Ice cream and candy corn pumpkins.

Hey, not too many years ago I would go to one of those cheapy grocery stores and buy an angel food cake that came in a throw-away aluminum pan and eat the entire cake with my fingers on the way home in a car! They talk about using a cell phone being dangerous while driving....how about eating a cake with your fingers! Those cakes are a sticky mess!

I LIKE fruitcake....I know not many people do. I never tried to bake one 'cause they seem like they'd be expensive. Mincemeat is expensive enough...the stuff I bought for my bakeoff recipes was over $6.00 a jar!!!!! Shoot!

I am a kindred spirit when it comes to baking your own stuff...no hydrogenated oils in my cake. As a matter of fact, everytime I make a pie or pies, especially during the busy holiday season, I sometimes think that maybe I'll buy some pre-made crusts to save time. But then I can hear my dear mom in my head telling me I can make them better and cheaper at home. So, I do.
Don't have any experience eating cake in the car, but I have opened a seltzer water a little too fast while driving! Deluge!

I got the cookbook on Saturday! It's unbelieveable.....I'll start experimenting this weekend. I think I'll start with "Tunnel of Fudge"........maybe - this one was a 60's Bakeoff winner, by the way.:9:9:9:9:9:9:9:9

cake recipe? Cocunut is my favorite!! I searched for it,
but I couldn't locate it.

No Fair! No Fair! :) I've been thinking about that Coconut Cake ever since Murph mentioned it Oct 24th? LOL Did anyone ever find the recipe on line?
Honeybunch, I envy you....you can do all this cooking and still keep in shape. As I mentioned in a previous thread....it doesn't take much and here come the pounds. I'm like a fly to sugar when it comes to desserts....:9 I really have to double up on workouts when I get into the sugar...But... I can't wait to see, and taste what you have cooked up for the contest....

I have posted so many recipes that I don't remember which one I have & haven't! I may have posted an "Earthquake" cake that has coconut. That's the one that stands out in my mind.
