awesome potato salad recipe

Okay first off, I heart Rachael Ray ;) This is a deviled potato salad that can accompany almost anything and is great for summer BBQs. Also, it's super easy! Thought I'd share.

2.5 lbs all purpose potatoes
1/4 onion
3 Tbsp yellow mustard
1/2 c FF or reduced fat mayo
1 tsp paprika
1 tsp cayenne pepper sauce
salt and/or ground pepper to taste
2 scallions for garnish

Boil potatoes in water until they are tender, roughly 10-15 min. Drain and return potatoes to the warm pot to dry them out. Let the potatoes stand 2 min and then spread out on a cookie sheet to quick cool.

In the bottom of a mixing bowl, grate or finely chop onion. Add mustard & mayo, paprika & cayenne pepper sauce to the onion and stir to combine. Add potatoes to the bowl and evenly distribute dressing. Season w/ salt and pepper if desired. Top w/ chopped scallions.

I Heart Rachel Ray, too! She actually made Monte Christo sandwiches sound good. And I followed through & made them. Bad idea. Not good. Not calorie friendly.

Sounds good!
I like to add chopped red pepper, thawed frozen peas, and torn baby spinach to my potato salad to make "red and green potato salad." I think that would be good added to this recipe as well. I like to have almost as many "other" veggies as potatoes.
