Anyone have a HEALTHY and EASY spagetti sauce recipe for me?

I am looking for a healthy and easy sauce to make this weekend with my DH.

I would like to make meatballs too!

Any help would be greatly appreciated as always! :)

I don't have a recipe per sae, but I know how I cook it...


1 tbsp olive oil
One red onion - medium sized
4 cloves of garlic
1 28 ounce can of diced tomatoes (can sub 2 pounds fresh instead - I do depending on whether or not tomatoes are in season)
1 6 oz can of tomato paste
1/4 dry red wine or sherry (you can skip that part - but it does add flavor)
Fresh basil
Fresh oregano
crushed red pepper
salt and pepper

Sautee onion and garlic until soft. Add tomatoes, paste, and wine and simmer for 15 minutes on low heat. Add basil, oregano, red and black pepper and salt to taste (I usually add 1/4 cup basil and 1 tbsp oregano). Simmer for an additional 10 minutes to let the flavors mix - you can add the meatballs here, too. Serve over pasta of your choice.

That's a basic red sauce. You can jazz it up with all sorts of things. We will have Friday night "Clean the fridge Pasta" and start with that sauce, but add whatever veggies are left over in the fridge. Spinach, zucchini, squash, mushrooms, carrots, bell peppers... I sautee those with the onion and garlic and then add the rest. Nice hearty and healthy vegetarian meal.

I don't know if it would be considered a spaghetti sauce, but I make a sauce that came from a lasagna recipe, but I like to put it on any pasta.


1 md eggplant
2 lg red bell peppers
4 tomatoes
8 cloves garlic
1-2 sm cans tomato paste


Roast all of the vegetables and garlic in a 375 degree oven for about 30-40 minutes. Puree vegetables and garlic in a blender until smooth. Add one or two cans of tomato paste depending on how much tomato flavor you want. Add water if desired to thin the sauce. Fresh basil can be added as well.:9
