Any cooks out there??

My question is about mushrooms, portabellas.

I don't know all that you do with veggies but how do you save your mushrooms from getting hard?

do you cut them up and freeze them? It seems when I buy them in the little container they stay fine but as soon as I open them up, they get hard if I don't use them right away

Hey tytbody! I would say definately do not freeze them. they get mushy when they thaw out. I take mine out of the container and but them in a baggie with a piece of paper towle to absorb moisture.

Mushrooms are like lettuce...the sooner you eat it up the better. I do the damp paper towel with lettuce as well and it does extend freshness. I love mushrooms, big ones stuffed with tomato and cheeses or little ones sauted.

Remove the gills, brush them with olive oil and basalmic vinegar, salt and pepper and grill them. Brush them as they grill with a little more of the oil and vinegar and they are delicious. They can be broiled too. We grill year round in AZ but I know that's not available to everyone.

what's the gills? the neck part? or those parts that look like I don't know, what ever that is.

If possible, place them in a small paper bag after getting them home. They will last a little longer when they have some air getting to them. The plastic wrap on those containers just destroy the mushroom.

You will still need to cook them within 2 days of purchase or they will go bad.
 
Well, these are over 2 days and they looked okay and felt okay and I ate them last night. Now they are in the fridge in a plastic bag.

I don't know what to do. Freeze-no freeze, plastic-no cook. Yikes...

I froze before and used them in my omelettes and that worked. I guess they must be okay to freeze cause they do it on Pizza all the time.

I think I just messed up the last time by not covering them entirely up.

TyTbody, the gills are on the bottom of the mushroom, in the inner part. I scrape them out, so the mushroom is clean and when flipped a maranade stays in the little moat removing the gills creates. Very tasty!

So that's how you do it. I tried stuffing mushrooms and the stuff just stayed on top. So you scrape it out. Ahhhhhhh. thank you. LOL. Never knew this. LMBO.... :)

Can't do that with these tiny pint size things I have. Will have to try it again with medium ones. Then again, look how many I'd eat. yummy....
