Amaranth

Has anyone successfully "popped" amaranth? I'm trying to pop some to use in recipes, but it's NOT working. I tried the hot air popper method, which was a disaster: The tiny things just flew all over the kitchen--great fun to clean up!:p I tried popping some in a pan on the stove, but they only toasted and didn't pop. What am I doing wrong?

Also, any recipe ideas? I cooked some this morning and mixed it with frozen berries, cinnamon, and stevia. The berries made it cold (and yummy). I don't think I like it very much warm. I have a grinder, so any recipes calling for amaranth flour would be welcome, too.

After watching some YouTube videos, I tried again. I was able to get some of it to pop, but about 2/3 of it doesn't pop. I've had this batch of amaranth for a while. Is it too old?
 
I just read about popping amaranth in a magazine - was it Runner's World? Anyway no instructions and I remember wondering how you could get those tiny grains to pop! I actually love it warm with a little vanilla protein powder, frozen berrries, cinnamon and walnuts! I alternate between that and oatmeal for breakfast!
 
I've never tried popping it.
I've sprouted it (soak 20 minutes, then rinse and let air dry, maybe rinse one more time: it sprouts a tiny nib pretty quickly). Then I cooked it with extra water (unintentionally) and added chia seeds at the end to soak up the extra water. It was a delish breakfast treat, IMO.
 
Yum! Thanks for the great ideas. I'm actually sprouting some right now, but next time I'll have to lay down some paper towel on the bottom of my sprouting tray 'cause they're so tiny I lost some in rinsing. My trays can handle broccoli seeds, but not amaranth.

I really need to figure out the popping thing, though. The little bit I did get to pop was so tasty. When I first bought it, I wasn't aware that you're supposed to keep it in the fridge or freezer, so I think mine has been sitting too long.

I just use a Mason jar with a fine screen lid (that I got from www.sproutpeople.com . The smallest gauge screen top works for all but the tiiniest seeds, like teff--which I haven't seen for several years.)
