108 eggs

I currently have 9 dozen eggs in the fridge. Would anyone care to share their favorite quick (and meat-free) egg recipes. Breakfast, lunch or dinner, it doesn't matter. I just can't eat 108 eggs scrambled.

Also, does anyone know how long eggs keep in the fridge? These are farm eggs, not store eggs.

You can make frittatas. I have a recipe here for a cheddar and spinach frittata. It is from a magazine. There are also recipes here pizza frittata and pepper and egg sandwiches. All are quite lengthy. If you wouldn't mind PM'ing me your e-mail address, I'll scan it and send it to you.

Is 9 dozen eggs some feng shui thing - "if you have 9 dozen eggs in your fridge, they will bring you great fortune"? Were you feeling "broody" but have now changed your mind and want to go on a killing spree instead?

I'm part chicken. It is my responsibility as a part chicken/part woman to produce as many eggs as possible. Unfortunately, the FDA has these "rules" against marketing cross-species eggs, so I am forced to store them below room temperature lest they start smelling funky.

I agree with fritattas. I like zuccini. My spelling is terrible sorry. Slice three medium zuchs and use 8 eggs. Also, stir in some parm cheese. I start it on the stove and finish it in the oven. Also, you could make egg salad. Hard boiled eggs last a week in the fridge. I use one hole egg and three whites with some chopped carrot. My favorite are eggs sunny side up with the yolk dripping. Too bad there isn't an egg/bacon/butter diet that works. Melissa
