Southbeach, the phase II & III phases are healthy... Phase I, is a quick start, but not necessary, if you eat right and exercise regularly. I would look into other low glycemic diets, that is what the SB is based on. There is a book called, "The New Glycemic Revolution" and it explains how eating the right carbs can stabilize your blood sugar and help you lose weight. That doesn't mean you can't have pasta, rice and bread; in fact, 1/2 cup of par-boiled rice (Uncle Ben's convereted rice), or 1/2 cup of pasta(protein enriched),is ok to eat because they are low on the glycemic scale, below 55 GI (Glycemic index) just as brown rice is... What it boils down to is balancing your carbs with low fat proteins, eating a wide variety of foods, fruits, veggies, and starches, and sufficient fiber, 28 - 35 grams per day, and drinking @ least 6 - 8 cups of water per day. My son is a TYPE I diabetic and we do carb counting, using the GI... There are also websites that help explain this and the SB diet has good information regarding the GI diet... The premise is, that if you eat a higher GI food, like a small baked potato, which is good for you, if you eat the skin, you would balance it out with a lower GI choice, such as lots of veggies, and a low fat protein; along with eating smaller portions, and eating snacks in-between meals, i.e. 1/2 cup cottage cheese and 1/2 any fruit, etc... and maybe cutting out evening carbs (for dinner, this has worked for me), and not eating anything after 7:00 pm; exercising regularly and passionately... you will succeed...
