Ingredients
1/3 c cornmeal
2 c fat-free milk or almond milk
2 TB brown sugar or substitue
1/2 tsp cinnamon
1/4 tsp salt
1 egg
2 apples, chopped
1/4 c raisins
Directions:
– preheat oven to 350F
– spray casserole dish, or individual custard cups with cooking spray
– heat 1 1/2 c milk to boiling
– combine 1/2 c milk with cornmeal and stir into boiling milk
– cook 5 to 7 min until thick
– add sugar or substitute, cinnamon and salt
– beat egg and stir into mixture
– add apples and raisins
– pour into baking dish or cups
– bake 30 min in cups or 40 to 45 min for casserole, cool 15 to 20 min
