Ingredients
2 tbsp almond flour
2 tbsp ground flax-seed
1 or 2 eggs (both work just fine)
1/4 tsp baking powder
half packet of Stevia
your choice of a berry: 12 cranberries are used in this, but you can use strawberries, apples, blueberries, etc.
Directions:
Put the almond flour and flax-seed in a microwave safe bowl. Add baking powder and Stevia. Crack one to two eggs into bowl and mix it all up! Dump 12 cranberries (or blueberries, apples, raspberries, etc.) in bowl.
Put it in microwave for 90 seconds.
You can either eat it in bowl or take it out and eat like a medium sized muffin.

this was really good & so easy! i was going from memory so did not put in the baking powder or the almond flour. i used 3 egg whites, 3 tbsp ground flaxseed, pinch of cinammon, some craisins and half a banana and a little squirt of agave nectar. turned out great!
I tried this recipe this morning and it was tasty, but the center didn’t cook well so I had to up cooking time which made edges a little overcooked. Have you tried making muffins in the oven? If so, I would love to know how you did it as I would like to make several for the week. Thanks.

Microwave times do vary. I have used one egg on some days and two eggs on other days. I find 90 seconds works best for me. Cinnamon is always excellent to add. It is very simple and you can basically put anything in it and it still works. I haven’t made them in the oven, but I will see if I can figure out the directions. I saw that there is a protein chocolate chip cookie recipe on here, and I wonder how long they are cooking it for. I supposed you could substitute coconut flour for the almond but cook it less since coconut tends to be thicker.
I love this! I am always looking for ways to eat eggs as I don’t like them but they are so great for you. This is wonderful with cinnamon and I add more fruit and use 1 egg. Thank you for this super easy, uber-healthy egg recipe!
I’ve also used this recipe w/o the stevia and berries as a make-shift hamburger bun.
