Ingredients
1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup oats or 1 packet instant oatmeal
1/2 cup Splenda sweetener
2 teaspoons baking powder
2 tablespoons ground flax seed
2 tablespoons wheat germ
1 egg
1/2 cup fat free milk
1- 6 ounce yogurt (any flavor)
1/4 cup applesauce
1 small to medium mashed banana OR 1/2 cup diced strawberries OR 1/2 cup blueberries (all are optional)
1/2 cup sugar free or semi-sweet chocolate chips (optional)
Directions:
Preheat oven to 400 degrees. Spray muffin pan with cooking spray such as Pam. Mix first 7 (the dry) ingredients in a large bowl. Add remaining ingredients. Blend until all ingredients are combined. Spoon batter into muffin pan filling each 2/3 full. Cook 18-20 minutes or until toothpick comes out clean. Makes 12 wonderfully delicious muffins. These are great for a snack or filling breakfast. My kids LOVE them especially with the chocolate chips!!
