Roasted Vegetables

Ingredients

6 cups assorted vegetables (such as zucchini, carrots, bell peppers, onions, potatoes, asparagus, yellow squash)
2 TB olive oil
1 tsp. garlic salt
1 tsp. dill
1 tsp. parsley
1 tsp. basil
1 tsp. onion powder
1/2 tsp crushed red pepper

Directions:

1. Preheat oven to 450 F.
2. prepare vegetables (clean and cut into bit-size pieces)
3. mix with oil, seasoning and spices.
4. place into a large pan sprayed with non-stick cooking spray, arrange in a single layer.
5. bake for 35 minutes or until tender.
6. turn on broiler during last 2 – 3 minutes if desired.
