Ingredients
• 1 pound beets
• 1 large shallot, minced
• 1 small jicama, peeled, and diced
• Raw corn off the cob – 1 cob
• Salt and freshly ground black pepper
• 2 teaspoons Dijon mustard, or to taste
• 1 tablespoon sesame oil
• 2 tablespoons apple cider vinegar or other good strong vinegar
• Minced parsley, cilantro, rosemary or tarragon
Directions:
Grate the beets of their skin, and make sure the shallot (or you can use any kind of onion) are minced well. Then cut the corn off of the corn cob. Combine all the veggies: the beets, corn, jicama, and shallot and toss. Then add the salt and pepper, sesame oil, dijon mustard, vinegar and herbs and toss and enjoy. Depending on how much flavor you want, you may need a little more oil and vinegar. Serves 5 and tastes so fresh and amazing. It’s like health in a bowl!
