Ingredients
1 and a half cups of pecans, almonds or walnuts (or mix all three!)
2 x 3 oz dark chocolate bars (I use 88% Endangered Species Bars)
2 tsp espresso (decaf or regular, your choice) finely ground, or, use 1/4 prepared espresso and omit the water that is included later
10 – 12 dates, pits removed
1 tablespoon vanilla extract
1 tablespoon chocolate protein powder (your choice of type)
2 tablespoons almond or peanut butter
10 drops of Stevia or 1/4 tsp powdered Stevia
1 tablespoon honey
2 tablespoons water, more may be necessary if the mixture is too dry
Directions:
-In a food processor, blend the nuts, chocolate, protein powder, espresso and peanut butter until finely chopped.
-Add dates and process until well blended.
– Add in vanilla, water, Stevia and honey, blend.
– When the mixture is completely blended, scrape out into an 8×8 glass baking dish that you can freeze in.
– Freeze for 2 hours.
-Cut into bars and serve. Store in freezer.

Just a note on these–if you don’t like the taste of coffee, I have made my last two batches omitting the espresso and just adding a 1/2 cup of water instead…they come out perfectly fine!

Wow. Look yummy, but loaded with carbs and unnecessary calories. Personally, I’d omit the dates and only put in half of the chocolate, if any. I’d also replace all the nuts with a quarter chocolate protein powder, a quarter coconut flour, and then a quarter flax meal and a quarter almond meal. That way they will still be gluten free but way lower in fat, calories and carbs.
The dates are actually quite healthy, not sure why you’d want to omit them. If you put in half the chocolate, you’ll get half a batch which would be fine. As to loaded with calories, it’s a snack for after a workout, but hey, you don’t have to eat them 🙂 I love them!
Looks and tastes delicious! I spritzed a little walnut oil on my spatula to spread them easier, and wow, yum! And yes, they are snack post-workout 🙂
