Banana Power Muffins

Ingredients

3 Bananas
1/2 cup plain greek yogurt
4 Eggland’s Best Egg Whites
2 Cups Oatmeal
1/4 cup of powdered peanut flour (or PB2)
1 1/4 Cup Oat Flour (oats ground into a flour)
? Tsp Baking Soda
2 tsp Vanilla

Directions:

Preheat the oven to 400 degrees.
Put 2 1/2″ muffin tins in muffin pans. Makes 12 muffins.
Put the three bananas, 1/2 cup greek yogurt, 4 egg whites, 1 tsp baking soda, and vanilla in a bowl. Mix these ingredients until they are blended.
Mix in the peanut flour, 2 cups oatmeal and 1 1/4 cups oat flour. Stir all the ingredients until blended. The consistency of the batter should be gooey. It should not be too dry or too runny.
Put about 2 heaping TBSPs of the mix in each muffin tin.
Place in oven and cook for 15 minutes or until the muffins are not gooey inside. The test if the muffins are done, poke on in the middle with a toothpick. If the toothpick is dry, they are done. Complex carbs from oats give energy! Protein brings in serotonin, our feel good hormone! Yogurt adds calcium for healthy bones! Bananas give potassium to easy muscle cramping! Power from all these gives a great start to a healthy day or to power you through a mid-afternoon crash! To make gluten-free, use gluten free oats. To make Vegan, use soy yogurt! Add walnuts to add omega 3s and try blueberries for a nother variation! Enjoy!
