Almond Butter Balls

Ingredients

1 cup Natural almond butter (or Natural peanut butter or Natural cashew butter)
1 cup Old Fashioned Oats (I use organic whenever I can)
1/2 cup sliced almonds (or chopped pecans or walnuts)
1/2 cup honey
1 tsp vanilla extract (you can use almond extract here, but it is a little less sweet)

Directions:

Mix together all ingredients EXCEPT the sliced almonds (or pecans/walnuts).
Roll into balls.
Roll in the nuts to coat.
Store in the fridge, wait about thirty minutes to experience.

*Note. Sometimes I just mix in the chopped nuts, because depending upon who knows what (the temperature or whatever…) the nuts don’t stick as well when rolled…so, mixing them in gives them a great texture and the nuts stay put!
Also, I need all the extra protein I can get as a vegan, so I add a couple teaspoons of protein powder.
