I just wanted to share a recipe I made up by just throwing together some things I had.
1/2 Small Zuchinni-sliced thin
1/2 Small yellow squash-sliced thin
3 Large canned tomatoes (didn't have any fresh)-cut into bite size
1/3 Can of Black Beans
1 Stalk celery with leaves-cut up into small slices
1/2 Tsp. fresh cilantro (can omit if you don't like or add own spices)
1/4 Cup of Water
I then microwaved this. After the veggies were soft, I added a cup of cooked rice to the mixture and stirred together. It came out like a soup. It was soooo good and very filling! Lots of veggies, some protein, low fat & low calorie. ENJOY!!!! :9
