Ok, I haven't been able to really enjoy some pancakes or any kind of baked goods in a while. I am allergic to wheat so for the longest time I've cut out breads entirely, but I just tried Pamela's Pancake and Baking Mix, after trying her wheat-free cookies and loving them, and I have to say it is really wonderful! I followed the recipe on the bag but substituted applesauce for oil and added a dash of nutmeg and they are awesome! Even if you don't have a wheat issue, these are the bomb. I made extra and popped them in a bag in the fridge for my boyfriend to have in the morning. He can eat wheat but I know he'll love these, and that makes it easier for us to eat together.
I also highly recommend, for a sweet tooth fix, Pamela's cookies. She makes all varieties, I've found them at Whole Foods, on Homegrocer.com (which I love) and health food stores.
I just wanted to share the find. These were decandently good! I'm going to try the yeast-free bread recipe and some others on her website now, too (www.pamelasproducts.com) I think most of her stuff is also dairy-free, another thing I had to eliminate and find it difficult to find any sort of treats without wheat or dairy in them.
