What do I serve guests for lunch?

We are having some guests to our home next week for a few days.

Personally, I just mostly pick throughout the day between breakfast and supper, so, I'm not used to fixing lunch.

I don't know what to serve guests for lunch. I can take care of supper with no problem, but what about lunch.

Can you help with some suggestions, please? TIA
 
Oh Gosh...for lunch I eat whatever is available. lol I'll eat breakfast foods, left over dinner, sandwiches, you name it...I have never entertained to where I needed to serve lunch either so even though I eat it every day...I have no idea what I would serve guests...???

What about just getting a selection of things to make sandwiches and let them sort of put them together themselves? Some cold meats, cheeses, assorted breads, spreads... that kind of thing. Then they can choose what they like.

Either that, or on the first day offer them Steak Tartare and then they'll make sure they go OUT for lunch every day:)
 
You might also think of making up a couple of batches of "deli" type salads and keeping them on hand in the fridge. Pasta+veggies w/lowfat salad dressing, threebean type salad, plain garden salad w/ a variety of dressings, or even a macaroni/potato salad (each w/ lots of veggies and lowfat mayo/yogurt/sourcream dressings w/ fresh herbs. All delicious, pretty healthy, and go great w/ sandwiches.

LOL Shelley-believe it or not, I had steak tartare once at a french restaurant and I actually LIKED it! I know! I couldn't believe it! I must have been out of my mind that day! lol I can't prove that theory though as I have never had the opportunity to try it again.

I really like Steak Tartare too!

Definitely have sandwich and salad stuff on hand. You could also make a big batch of soup or chili in advance - you could offer that with sandwiches or salads and it would be pretty low maintenance...just microwave!

You could also fix a healthy banana bread or light sponge cake so that there was a little something sweet on hand if someone gets the craving. Also - have some fruit around and some veggies with a fun dip or hummus.

Of course, this is all assuming you were looking for healthy options. My friends would want me to have cheetos and ice cream on hand!!!

How about Tortilla soup and a big salad.......... tortilla soup is easy, fast and easy to reheat or even freeze. i use soy milk, ff cheese, and whole what low carb tortillas
