Educate yourself and develop a support system.
Pick up "Becoming Vegan" for a good overview
Pick up "Vegan Freak" for a guide to how to deal with non-vegans (it brings up a lot of situations we vegans find ourselves in, and gives tactics for dealing with them. The authors also have a website, but I don't have the URL off-hand)
Read John Robbins' "The Diet Revolution"
T.C. Campbell's "The China Study"

>I was talking with a friend/co-worker and her
>immediate response was "Don't become a vegetarian. People need
>to eat meat. It's not healthy. I crave meat.
Is her argument that because she craves meat, "people need it"? Really scientific.
Just because someone "craves" something, doesn't mean they need it.
People crave drugs (and certain substances in meat--like hormones--and cheese---a natural-occurring caseinomorphin--can be addictive).
> She said it
>wouldn't make a difference with migraines or stomach issues
>and she just couldn't live without meat.
How does she know it won't make a difference? Can she predict the future?
Again, she is not literaly saying "I would die without the nutrients in meat," but rather "I'm hooked on meat."
