Vegetarian Black Eyed Pea Recipes?

Do any of you have any yummy vegetarian black eyed pea recipes to share?
I've googled some but would like some specific recommendations.

I don't have a specific recipe, but I like to make a spinach and sweet potato soup that I add frozen black eye peas to. I just kinda jumble all the ingredients together using vegetable (or chicken) stock and curry powder. Sometimes I substitute collard greens for the spinach.

I used vegetable broth instead of chicken broth and I used hot Rotel instead of the diced tomatoes with chiles. (You can see by the recipe that it needs to be spiced up just a tad.) I should also add that instead of 4 cans of black eyed peas, I used 2 cans of black eyed peas and 2 cans of crowder peas. To be honest with you, I don't know what crowder peas are and I have no idea why I had 2 cans of them in my pantry unless I bought them by mistake, but there you have it.:p I don't know if that made a difference in the taste or not, but it was very good IMHO.:9 :9
 
Hello! Funnily enough I found this recipe yesterday as I have a bagful of peas gathering dust... it looks easy and mighty tasty! It's got caramelised onions as a garnish and a spicy avocado/sour cream dip. I think i am going to use 0% fat greek yogurt instead of the sour cream as you can't really find low fat sour cream here in the UK...

It's from Ready Steady Cook, a TV show where they get a bunch of random ingredients and have to come up with a bunch of dishes in 20 minutes. They used canned beans but if you had dried ones you could always cook em first...
