Tofu question

So - for all of you tofu eaters - I have some tofu in the fridge that I was planning to use tonight. The "use by" date is today's date. Use it or toss it?

Personally I would toss it, but then, I'm somewhat of a fanatic about that.

I'd use it today. And I probably have in the past used it on the last day. ...

I asked someone in my office and they said today, too. That's three todays, so far. I'll keep watching and let you know how it goes. Here's keeping my fingers crossed.

What type of tofu? If it's asceptically packaged, it should be fine, even tomorrow or the day after.

If it's water packaged, and you haven't changed the water, it might not be at its best (you can tell by the smell and the look of the water), but should be fine.

Does it actually say "use by" or "best if used by"? There is a slight difference.

I hesitate to admit it but I've used tofu waaaay past the 'use by' date. Each time (yes, more than once!), it has tasted fine. And in case you're wondering, yes I am fearless risk taker. That's just how I roll.
