Does anybody miss this check-in? Was it helping anybody? Just, ummm, checking in!
 
Hi Shannon-
I do miss it, but I stopped posting my daily menus. However I do enjoy getting and sharing new healthy recipes and meal plan ideas. I was getting a little worried too that it wasn't really moderate; it was almost becoming a confessional :eek: on some days. I don't want anyone feeling guilty x( here because they posted one thing and ate too much afterwards.

Now if it gets posted and I have a good healthy idea to share I will. :)

PS- I enjoyed the E2L shopping list thread!

That's kind of what I thought too. It seemed to make eating competitive.
 
Hmmmm....I enjoyed the checkin and never felt like I was comparing myself to anyone else. I just liked a little accountability. I went away for a vacation, came back and Poof...the checkin died! Did it just die a natural death? I hope my absence wasn't responsible in any way. There seemed to be plenty of others in on it.

Hi girls! :D

I've had a change in workload that is keeping me busy, that's why I didn't keep up lately. I hope you had a nice vacation, Paula.

I like the idea of exchanging recipes/meal ideas for healthy eating. I posted this recipe to another site I visit. Maybe someone here can use it too. Remember, I cook for six so you may want to cut this recipe in half or freeze part of it.

From the cookbook 'Almost Homemade' (Gooseberry Patch)

Quick Minestrone

2-14 oz cans chicken broth
2 Cups water
28 oz can diced tomatoes
15 oz can kidney beans
3 Cups frozen vegetable blend
1 Cup small shell pasta

Combine broth, water and vegetables in a large saucepan. Bring to a boil; add pasta. Reduce heat, cover and simmer for 20-25 minutes. Sprinkle servings with Parmesan cheese. Serves 10-12

NOTES:

I used two cans of beans and did not drain them.
I did not add the frozen vegetables, but I did add some chopped onion (handful).
I added dried Italian seasoning herb mix.
I served the soup with a mixed green salad. This was very quick and easy to make...and was actually tasty!!

One more thing...how about we change the name to Healthy Eating. Maybe more people will be enticed to post recipes/meal ideas too.
 
And...for my third post...I am making a beef roast for supper tonight with potatoes and carrots cooked in with the roast. This is my Dh's favorite meal.
 
40 something, Thanks for asking. I had a wonderful vacation in the Texas Hill Country.

I only cook on the weekends and I cook a little more decadent then. Hubby cooks the quick but healthy stuff during the week, grilled chicken, salmon, etc.
But I have a few good recipes I could share.

I will keep a look out for a thread.
