I just made these and they are really good. I just wanted to share with everyone here.
Stuffed Sweet Peppers
Peppers:
1.25 lb ground turkey
1 c bread crumbs (made my own with whole wheat bread)
1 c liquid egg substitute
1/2 c diced onion
1/2 tsp sage
1/2 tsp thyme
1/2 tsp salt
1/2 tsp pepper
3 large red peppers
Sauce:
2 c prepared marinara sauce (used some homemade sauce that I had)
2 c diced tomatoes
1 tbsp chopped garlic
1 tsp dried Italian seasoning
Heat oven to 375 deg
Coat a 13x9 baking dish with non-stick cooking spray. In large bowl combine turkey, bread crumbs, egg substitute, diced onion, sage, thyme, salt, and black pepper.
Fill each pepper half with an equal amount of turkey mixture and place in prepared baking dish.
In large bowl combine marinara sauce, tomatoes, garlic, and Italian seasoning and pour over peppers.
Bake for 55 to 60 min or until sauce is bubbling and peppers are tender and filling registers 155 deg F on meat thermometer. Cover with foil and let sit for 10 min.
