I made this recipe the other night and it is really good. The heavy cream and butter boot it into the "unclean" category. Still, delicious!
INGREDIENTS:
- 1 1/2 sticks of butter
- 1 cup sliced garlic (about 30 medium cloves)
- 1 large onion (2 cups) finely chopped
- 1/2 all purpose flour
- 5 cups chicken broth (homemade if you have it. I didn't and it was fine)
- 5 garlic cloves pressed or minced
- 3/4 cup heavy cream
- salt and cayenne, to taste
- 2 tomatoes, peeled, seeded and finely diced
- Melt the butter in a heavy pan over medium-low heat and saute 1 cup sliced garlic with onion until softened, 5-7 minutes. Stir in the flour to form a paste. Cook, stirring, until frothy, few minutes. Do NOT let it brown.
- Whisk in about 1/3 of the chicken broth, then pour in the rest of the broth and then stir occasionally over low heat for 10-15 minutes, until slightly thickened. Add 5 minced or pressed garlic cloves and simmer for another 5 minutes, stirring occasionally.
- Add the cream and return to simmer. Stir and cook another 8-10 minutes. Season with salt and cayenne. Stir in tomatoes and remove from heat. Let stand for ten minutes and then serve.
- Enjoy!
