S'mores Sandwich Bar Cookies

1/2 c. butter
2 c graham cracker crumbs
1/4 c packed brown sugar
4 Hershey bars
3 c miniature marshmallows

Place butter in an 8X8X2" square glass dish. Microwave on high 1 minute, or until melted. Stir in cracker crumbs and sugar, making sure no sugar lumps remain. Remove 1/3 c. crumb mixture for topping. Press remining mixture firmly in dish. Rotating dish a quarter turn after each minute, microwave on high 2 to 3 minutes.

Arrange candy bars evenly over top, breaking to fit. Sprinkle with marshmallows. Microwave on high 2 to 3 minutes, or until marshmallows melt. Sprinkle with reserved crumb mixture. Let cool at least an hour before cutting into squares. Makes 16 servings.

Note: I used twice as much for the candy and marshmallows, and I also used regular sized marshmallows. I like excess, what can I tell you! :9 :9:9

HB-you are the woman!!! If I remember right you were the person behind the delicious posting of Choc. covered Cherry Cake (or was it cheery...;-) )and the Praline Pecan. They are ALL awesome!!! I've got a fairly easy one to add to the cookie-type theme:
Butter Pecan Cookie Pie
2 cups finely crushed pecan sandies cookies (i use reduced fat)
6 tbsp marg (divided and softened)
1 cup pecans (finely chopped)
1/2 cup H2O
1 pkg instant pudding (FF of course :D)
1 can sweetened cond. milk (FF again)
1 8oz. container Cool Whip (lite)
Mix the pecans with 2 tbsp marg and bake at 350 for 10 min. or so. Then take 1/2 of pecans, mix with cookie crumbs and rest of marg. Press in the bottom of a large DEEP DISH (screwed that part up at first) pie pan and bake 10 min. at 350. then cool. Mix the pudding mix, H2O, and cond. milk and beat with mixer until thick. Add the rest of the pecans and then fold in the Cool Whip. Pour on top of cooled crust and chill until ready.

and when you use all the fat free or lite, isn't too terrible for you ;-)

Pecan sandies recipe

Warning: If you make the S'mores recipe....don't attempt a large serving like my usual one, which is the size of a paperback book! Cake I can handle in a bit hunk, but this stuff is EXTREMELY rich!

I did, however eat it after a large fish dinner!!! I could've handled more on an empty stomach.

Glad you liked them, Deb H!!!!!!! Maybe we can post our favorite holiday recipes......I happen to like mince meat, and lost a very good one for mince meat bars. There are some good ones in this month's Quick Cooking magazine.
