Revisiting Tosca Reno's "Eat-Clean Diet" book

Hi folks!

For my recent birthday one of my dearest pals in the whole world sent me Tosca Reno's "Eat-Clean Diet" book, because she knows I am ALWAYS trying, usually with limited success, to incorporate a long-term cleaner diet into my and my family's lives. I found a ton of old threads about this here, but I thought I'd bring the topic back up so I could ask you guys a couple of questions. :)

First -- my older son who's in college has embraced vegetarianism, and is eating dairy but no other animal products. When he's home to visit, it would sure be handy to have some clean-eating vegetarian meal ideas. Anybody got some good ones?

Second -- I find this book very motivational -- finally, something has flipped the switch in my head! And I've seen a lot of discussion here about people feeling better (which seems natural to me) after really digging in and eating clean. I would love to hear some more success stories, folks, from those of you who have been following this for a while -- about how you're feeling, how this eating plan is factoring into your families' lives, how your weight has been affected, etc.

And third -- any great new recipes, especially for quick and easy lunches and snacks? I got the ones off Tosca's website to supplement the book, and I see she has a cookbook coming out in late September, but I also know this crowd is ALWAYS good for a few ideas!

Come & join the clean eating thread, it's called Clean & Tidy in the check in forums! There's quite a few doing Tosca's or other clean eating plans. I just read the book last week, but found just from my own eating experiences that I've been eating pretty *clean* anyway. I started w/ the South Beach diet a few yrs ago which is pretty much lean proteins, good carbs, fruits, & veggies so it's very similar.

There are lots of ways to make it vegetarian, especially beans, whole grains, brown rice, etc. Or there are lots of soy products, tofu, etc. One of my fav easy things to make are taco salads- you can use whatever kind of beans you like w/ some taco seasoning (and add meat to yours if you like), tomatoes, sliced avocado, and lots of veggies to make a yummy salad. (my dh of course adds in tortilla chips, sour cream, & meat!) Stir frys are also easy to make, lots of veggies, tofu, (or chicken for you!), w/ brown rice or other healthy grain.

As for my family, I have 3 girls that I strive to feed as healthy as I can. They all love oatmeal, healthy cereals, fruit, most veggies, and I try to limit the sweets/ junky snacks. (although I don't cut them out completely) I've also found that planning ahead is key- I'll boil a dozen eggs to have on hand for quick snacks, making extra chicken breasts for lunches/ dinners, etc. You can even make a big batch of oatmeal (especially if you use steel cut oats) and put the leftovers in the fridge. I generally eat my favorite oatmeal w/ berries for breakfast every day (actually look forward to it!).
