Tess' protein pancake thread made me think that it would be cool if all of us shared our favorite healthy recipes. I would love to have some great recipes to make. Especially since I am not the cook in my house...DF usually does the cooking but I would love to have some recipes in my arsenal.

Can't wait to see all the yummy recipes!

I would love to see a thread on this too!! I wanted to share just a couple of items...which aren't exactly "recipes", but they are yummy things that I had yesterday.

Lunch: Whole Wheat Bagel with non-fat cream cheese, sliced tomatoes and sliced cucumber on top (I LOVE this combination!)

Dinner: Homemade Turkey Burgers (ground all white turkey meat, tons of chopped garlic and onion all mixed together). I topped the burgers with a homemade tomato sauce (more GARLIC!!!) and ate it on top of a brown rice, brocoli mixture. It was very good and very filling.
 
One of my favorites, and I think it's a Weight Watchers recipe, is for "Big Breakfast Cookies". I make these probably once a month, and my husband and I both love them. Super easy to make, and they freeze just great (just nuke for 30 seconds before serving)!

1 1/4 C. oatmeal
1/4 C. raisins
1/4 C. flour (I use whole wheat flour here)
1 1/2 C. Fat-free dry milk
1 C. Unsweetened applesauce
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder
1/4 cup Sugar or Splenda
Optional: 1/4 C. each walnuts and/or chocolate chips }(

Preheat over to 350. Spray a large cookie sheet with Pam. Mix all ingredients together and spoon into 4 large mounts on sheet. Bake for 15-20 minutes.

Nutritional info: (per cookie, made with Splenda): 270 calories, 2 g. fat, 4.2 g. fiber (5 points) (Using sugar instead of Splenda adds 1 point per cookie, for a total of 6 points per cookie)

I believe allwildgirl compiled a book of all the recipes from Catheland, if I remember correctly. (Why I remember this I can't say as I don't even know how to turn on the oven). :p
 
Here are some of my favorite recipes:

-Black bean and corn salad:
1 can black beans
½ dup canned corn
1 diced tomato
2or 3 chopped scallions
Juice of 1 lime ( lime works better than lemon)
Drizzle of olive oil
Salt & pepper
A good amount of chopped coriander
Mix everything, enjoy!


-Red cabbage and apple salad:

Using food processor, shred ( correct word?) one half of the red cabbage and 2 apples. Add lime juice olive oil, salt and pepper. Mix well, it is very refreshing and eliminates any sugar cravings for me.


-Chicken skewers and roasted veggies:

Marinate chicken breast along with red peppers, onions and tomato in your favorite marinade for 30 min. Assemble the skewers , add salt & pepper and set aside .

In the oven sheet, mix zucchini, white mushrooms and eggplant with some olive oil and balsamic vinegar ( not too much vinegar) salt & pepper ,you can add basil or thyme. I would cut my eggplant a little bigger than the zucchini, maybe double the size of the zucchini pieces because eggplant cooks faster. I cut my mushrooms in half or in quarters depending on their size.

I cook everything at the same time in the oven, I put the roasted veggies in an oven sheet ( the one that comes with the oven when you buy one) put the top on the sheet and cook the skewers on top of it (the top has openings so that the juices fall in the sheet, sorry for the terrible description.

These are really yummy recipes, I hope you try them!!

This is something I threw together last night and I still can't believe how good it was. I might make it for dinner again tonight.

1 can white tuna (drained)
1/2 cup cooked brown rice
chopped scallion
chopped red pepper (little pieces)
1 T Hidden Valley Ranch light dressing

Mix it all together.
