Recipes made with healthy ingredients

I'm always looking for new recipes with healthy ingredients. Here is a very simple, very filling recipe:

1 large onion chopped
1 bell pepper chopped
1/4 tsp cayenne pepper
2 tsp cumin
1 tsp ground coriander
2 tsp dried basil
1 tsp dried oregano
1 28 oz can chopped tomoatoes
1 14 oz can black beans
olive oil

In a large skillet cook the onion and bell pepper and all of the seasonings in olive oil until soft. Add tomatoes and black beans and cook until bubbly.

Serve over pan grilled polenta.

Sometimes I add a little grated cheese on top.

It's delicious! I steam veggies like broccoli and cauliflower to go with it.

Instead of steaming those veggie's try roasting them in the oven. Cauliflower has a completely different taste when you roast it...much more palatable especially for kids because it carmelizes in the oven.

How do you roast cauliflower? I have some broccoflower I'd like to try that with. Do you add water to it? Cover it? How long and at what temp?
 
You roast any vegetable by throwing it on a baking sheet (tossed in any oils/spices/vinegars/marinades that you'd like, but none are ever necessary, the great thing about roasting is that it is a "dry" process and uses the vegetable's one liquid to cook itself, hence intensifying the flavor) preheat the oven to 400 degrees, and let the vegetables roast. Cauliflower usually takes about 10-15 minutes depending on your oven. It will get nice and brown, but don't let it burn. Smaller veggies like green beans, asparagus, or single cloves of garlic take less time maybe 5-8 minutes depending on size and desired doneness, just pull out a piece and try it.

Someone on this forum recently shared this site for the World's Healthiest Foods. It has some good recipes I've already printed & tried. Very easy too.

No problem, it's one of my favorite ways to eat veggies and I do it all the time. I don't think I've eaten asparagus any other way in years:9
