I thought someone out there might want to give this one a try. I had it this morning and really enjoyed it.
Banana French Toast
3 Tbs. Egg substitue (equivalent to 1 egg)
3-1/2 Tbs. skim milk
1 Tbs. vanilla whey protein (I actually used a vanilla soy protein by SPIRU-TEIN)
1/4 tsp. banana extract
1/8 tsp. cinnamon
Butter flavor cooking spray
2 slices wheat bread (I used Ezekiel sesame bread which can be found at some grocery stores in the freezer section or at a health food store)
Fresh banana slices
Sugar-free syrup
In a shallow bowl, whisk together egg substitue, milk, protein, banana extract and cinnamon. Spray skillet with cooking spray and heat to medium hight. While the skillet is heating, gently dip bread in the egg mixture, turning to coat and soaking the bread. Place the soaked bread onto the heated skillet and cook for two minutes on each side or until golden brown. Serve with a few banana slices and a little sugar-free syrup.
