Question about Cooking w/ Olive Oil & calories ..

So I'm trying to keep tabs on my total calories .. when cooking with olive oil, how do I account for that? I thought I read that some of it burns off, but some is absorbed into the food as well .. so if I use say, a tablespoon of olive oil .. do I factor the entire calorie content into my day, or is there some sort of rule of thumb for factoring in a certain amount?

I wish that I could help you! I hope that someone here can. I use olive oil when I cook, and I am VERY liberal with it; but then I don't use it every day either. I just pretend that all of the calories get burned up when I am cooking. Seems to work since I don't feel guilty when I am done eating! :D

I agree with Donna. You have to count it. On WW, 1 T of oil, any oil even olive, is 4 points and it is definitely counted in your points for the day. But, like Donna said, you need it, in moderation of course.
 
I'd count it all, just to be on the safe side.

Olive oil is good, but if you want to decrease it a bit, mix some cooking sherry (or any kind of cooking wine, or mirin--a japanese cooking sake) with some olive oil to decrease the amount of olive oil you use for stir frying (I will often just use the sherry: unlike water, it has a texture and "mouth feel" similar to that of oil, so give the same effect).
