Peanut Butter- Oatmeal Pudding Recipe

I'm not the one who posted this recipe but I've made it every morning since it was posted. I used vanilla because that is all I had. I believe she recommended chocolate... choc/PB oatmeal.. can you imagine???? Yum. I am going to the store today and chocolate pudding is on my list.

Also I have been putting SF strawberry preserves with PB in the oatmeal... PB and jelly oatmeal... it is GOOD.

yeah, what is the recipe to that. I just ate 2 spoons of peanut butter yum! Can you use sugar free pudding, the instant. I have that at home already.

Oh, I forgot to tell you about this snack with PB. It's lowfat graham cracker, spread peanut butter on it and then cut up a bananna and there you are. That is a great combination. Just like a sandwich but on a cracker.

One of my favorite topics! I got a recipe for oatmeal that I have used almost every day for the last couple months.

1. cup water - bring close to boil - reduce heat

2. add two tablespoons fat free/sugarfree pudding mix

Mix 1 and 2 completely

3. 1/2 cup quick oats

cook for 3-4 minutes constantly stirring. Take off heat and add 2 tablespoons of peanut butter ( I use Teddy's Old Fashioned Peanut Butter - crunchy)

ETA that I think she said that she used chocolate pudding

I modified mine a bit because I make my oatmeal a certain way using the microwave....


1 1/2 cups of water
3/4 cups Old Fashioned oats

Mix together and microwave for 3 minutes 30 seconds. Let sit for a bit (five minutes). Then I add 1 T PB and 1 T SF/FF instant pudding - any flavor you like.
 
I am so glad and not surprised at the reaction to this recipe. I posted it on a peanut butter poll last week. I got the recipe off the ya ya site last winter and have had it almost everyday since. In fact, many of my friends now make it everyday.
I use chocolate sugar free/fat free pudding. There is no need for sugar as the pudding is sweetened enough.
There is flexibility in the amount of peanut butter, of course!;-)
I also put in ground flax seed also.
I usually work out in the morning and have an orange or something after that. At noonish, I have my oatmeal and it holds me until dinner. It is the only thing that is satisfying enough to do that.
Good fat and fiber - how can you go wrong??????:9
