OT: vietnamese recipe needed :)

Hi everyone,

Since you all are so knowledgeable and helpful...I need some help!

My third grader is doing a school project (ah, don't we just *love* school projects...) on a country and he got Vietnam. Part of his presentation needs in include some sort of visual -- either a clay model or to dress up like a Vietnamese or to cook a Vietnamese food. I've decided to cook something but am having a hard time finding some sort of "finger" food that all the kids will attempt to try.

Any ideas? I've searched online but come up with recipes with ingredients I can't get locally.

Any help would be greatly appreciated!!

Have you tried searches on Vietnamese desserts? Kids usually like dessert... I found a list: http://asiarecipe.com/viedesserts.html#fruit

A lot of their ingredients will be hard to find if you don't have a little Asian store that sells those things specifically. They do have this coconut milk/tapioca pudding dessert which I believe can be made with stuff you can find in a regular grocery store.

Hi Heidi,

How about spring rolls (a.k.a. salad rolls) made with rice paper and veggies? It's definitely a finger food with no/little cooking involved. The only exotic ingredient is the ride paper.

ETA: Here's a link with a description and recipe. This one has shrimp in it, but you could just leave it out and just do veggies instead.
