Need a good pie recipe

Hey ladies, I am in need of a good pie recipe. I am doing dessert on Christmas Eve for the in laws and for my family on Christmas day. I'm bringing pecan pie to the in laws and don't want to eat that 2 days in a row. I'm stuck on what to bring to my family. I'm thinking pie, because the pie crust recipe makes 2, so I'll already be halfway there;) I've been thru every book and magazine I have and nothing is popping out. Mincemeat is yuck. In the past I've done Bailey's pie and a peppermint pie for Christmas, and I can't think of anything special. Its Christmas, so I really don't want plain old apple or cherry or anything like that. There has to be one heck of a whiz bang yummalicious pie recipe out there somewhere. What are your favorites? Point me in the right direction.

I also happened to fall in love w/ the picture on last months Bon Appetit- a chocolate peppermint meringue cake - looks faboo, but I don't want to buy a whole bottle of peppermint schnapps for just a splash of it. We'll never drink the rest. Peppermint schnapps - yick. So I think I'm going with pie.

Hi Nan,

I don't have a pie recipe for you, but can you just substitute peppermint extract for the schnapps? There'd be less waste & it's less expensive.

Just a thought. :)
 
I was thinking I could just sub. Its just to make the syrup you soak the cake in. Its sugar, water, and schnapps. I think I could just use extract. I have that. But pie sounds yum, too. I could make both :)

Oooh, pie. I found a great pie recipe and tried it out last summer. It was AWESOME. I posted the recipe and photos on my blog, here.

Now I must warn you, it is a vegan pie. But PLEASE do not let that prejudice you! This pie is ultra-decadent and nobody will notice or care. They will be too busy marveling at how much they love you for bringing them this incredible pie.

It is NOT healthy, it contains no vegetables, it is just pure fabulousness. Non-vegans refused to believe that there was tofu involved. People are still talking about it, and I've made it several more times to rave reviews. I even made up my own ice cream version (with homemade vegan ice cream - I call it "Nice Cream") - the recipe for that is here.

Hi Nan! Do they sell those mini bottles of Peppermint Schnapps? That's an idea right? On to pie, this recipe is totally simple and decadent and has wonderful rich holiday flavors. It's vegan too, but contains no tofu, just "normal" ingredients you'd find anywhere (chocolate chips, canned pumpkin pie mix, prepared chocolate-cookie pie crust). For the one "weird" ingredient, 2 tsp arrowroot, you can sub 1 tbsp cornstarch. I hope you pick it!!! :)
