Moderately healthy eating 4-10 Monday

Hi, everyone -

I discovered this weekend that if I eat what I truly want to eat, even though it seems perfectly healthy, my percentage of calories from fat goes way up. I can't help it. I like fattening stuff. So I guess I'd better stick to the salads!!!

B - steel cut oats with walnuts; apple; soy milk
S - another apple
L - big salad with beans and stuff
S - 1/2 c lf cottage cheese
D - not sure. May end up at my parents' house, visiting my grandmother who just flew in. If I eat at home, it will be based around brown rice.

Hey Judy - how's your ETL going? I lost three pounds as of the previous week, but no change last week. I've decided that true veganism isn't for me. I've cut way back on dairy, but I still let myself enjoy it once in a while, and those scrambled eggs sure did taste good Saturday morning!!! I do like extending my vegan options though.
 
Shannon, isn't it amazing how we gravitate towards the hi fat/hi calorie items? I did well over the weekend. Probably because I had to work. Today:

B - fresh fruit salad, thick slice steel cut oat bread w/ PB&J
L - hummus on slice 15 grain bread, salad, carrot sticks, apple
D - Spaghetti w/ chickpea sauce, salad
S - banana, grapes

Have a moderately clean day all.
 
Good Monday, ladies.

I didn't do well over the weekend but I had fun.
Oh well.

Here's todays plan:
B - 1 egg 2whites scrambled, lo carb toast, small chicken sausage,
grapefruit
L - Salad, dirty rice
S - apple, cottage cheese
D - venison, red beans & rice, steamed vegies

I ran intervals for the first time this morning in a month or so. My back hasn't started hurting. So far so good. I was easy on it though, I never hit it full speed ahead.
Tonight I will do PUB which is becoming my new favorite (MM was my old favorite; they're both great. Thanks, Cathe!)

So far so good with what I will call 90% vegan. I will eat seafood out. I don't miss dairy or eggs. And I am down 7.5 pounds in 3 weeks. I am probably at my healthy weight now or within 3 pounds or so.
also I will have a bite or two of dessert. Saturday I had one little chocolate egg.
With the change in food choices and more running DH thinks my legs and butt are more trim. And, he is the brutally honest type.

I have noticed a bit of stomach discomfort a few evenings when I have consumed a large amount of vegies and beans earlier in the day. Also, my water intake is not very good. Perhaps more water will help.

Hey Judy -
Sounds like you're making real progress! Congrats on the lower body improvements. I haven't noticed any there yet... I only want to lose 4 more lbs. That will put me at 120, and I don't think I should drop any more than that, no matter what my rear looks like. But I still have hope!!

Yeah, I don't miss the cheese - no cheese attacks or anything - but I do enjoy it when I decide to have it, maybe once a week. However, I am eating low-fat yogurt regularly.

Do you rinse your beans? I make sure I do, and never use any of the juice. Since I started doing that, I don't have any problems in that area.
