Here it is! Don't fall over at the 4 cups of 1/2 and 1/2. Remember, what with all the haulin' and cuttin' and heftin' and choppin' our forefathers and mothers burned about 83 million calories a day.
4 cups 1/2 1/2
3/4 unsulfured molasses
4 tbls unsalted butter
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp salt
1/2 cup yellow cornmeal
Preheat oven to 275. In a saucepan combine 1/2 and 1/2, molasses, butter, ginger, cinnamon and salt. Bring to a boil. Remove from heat and whisk in cornmeal.
Pour mixture into an 8 inch square baking dish and bake until it is firm but still jiggles slightly in the center when shaken (much like me despite 9 years of working out.
) Baking usually takes 2-2 1/2 hours. Let cool 30-60 minutes. Serve warm or room temp with ice cream or whipped cream. Serves 8!
