Lorrie's Buckeye Recipe from the July RT

L Sass

Cathlete
Remember me pushing these cookies at you all? I was doing that because, as I told Nancy, if they stick around me, then they really do "stick around me" and that's not a good thing. HA! So here you go:

Lorrie's Buckeyes

2 sticks butter, melted
2 cups graham cracker crumbs
1 cup shredded coconut
1 cup creamy peanut butter
1 pound powdered sugar
1 teaspoon vanilla
1 cup chopped walnuts

Mix all ingredients together and roll into bite sized balls. Refrigerate until set. Meanwhile, melt 12 oz semi-sweet chocolate chips and1/2 cup parafin wax in double boiler. Dip the tops of the balls into chocolate mixture for the buckeye appearance.

Enjoy.

Holy schnikes these look awesome! I'm totally making them this weekend...

Thanks Lorrie! (Although my thighs and arse probably won't be thanking you quite as much after I've downed a few dozen of these bad boys...;))

I thought it was hilarious that this recipe appeared on the same day as the link to how bad sugar is for you. I had to laugh at both of those subject lines appearing so near each other on the "new posts".

thanks for the recipe!

Kids did great at school, thanks for asking! Oldest did great at middle school; she really likes her teachers and handled changing classes like a pro!

How are you feeling? Hope you're doing well!
