kids' snack all grown up

Just have to share with you all how delicious this was. The PBS kids show Zoom has a snack idea for lettuce boats, which my kids love to make and eat. DH and I just jazzed it up for a delicious heavy hors d'oeuvre or light meal.

We took hearts of romaine lettuce, lined them with a few whole wheat homemade croutons, sprinkled on an asian sald topper mixture. We then diced up some cucumber, tomato, avacado, and threw in some sauteed beans and water chestnuts. We lined that veggie mixture into our boat and topped it with just a hint of ginger sesame non fat dressing. Fold over the top of the leaf, roll it up and you have a wonderful grown up lettuce boat. Think I'll do some for the 4th too. Just had to share!

Sounds great! I wonder if my six year old would go for it. How old are your children?

Hi Susan - my kids are 8, 5, and 2. The 8 and 5 y.o. love to make these, but just do the basics - tomato, cukes, croutons and some cheese - and ranch dressing of course. They make a lot of snacks from www.pbskids.org under the Zoom page. DH like the asian lettuce boat a lot though.
